Coconut Oatmeal Cookies

Ingredients
- 240g softened butter
- 200g caster sugar
- 200g brown sugar
- 2 eggs
- 1 teaspoon Taylor & Colledge Vanilla Bean Paste
- 1/2 teaspoon Taylor & Colledge Coconut Extract Paste
- 300g plain flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 160g rolled oats
- 75g desiccated coconut
Method
- Step 1
- Preheat the oven to 180C and line a baking tray with baking paper.
- Step 2
- In the bowl of an electric mixer, beat the butter and sugars until pale and creamy. Add the eggs, Vanilla Bean Paste and Coconut Extract Paste and mix until combined.
- Step 3
- Sift the flour, salt, baking soda and baking powder into the bowl and mix them in. Add oats and coconut, mix well to combine.
- Step 4
- Using a tablespoon of dough at a time, roll it into balls and place the tray then flatten each one slightly with fingers or a fork.
- Step 5
- Bake for 10-12 minutes or until golden brown. Remove from oven and transfer cookies to a wire rack to cool.
