Coconut Oatmeal Cookies

Ingredients

  • 240g softened butter
  • 200g caster sugar
  • 200g brown sugar
  • 2 eggs
  • 1 teaspoon Taylor & Colledge Vanilla Bean Paste
  • 1/2 teaspoon Taylor & Colledge Coconut Extract Paste
  • 300g plain flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 160g rolled oats
  • 75g desiccated coconut

Method

Step 1
Preheat the oven to 180C and line a baking tray with baking paper.
Step 2
In the bowl of an electric mixer, beat the butter and sugars until pale and creamy. Add the eggs, Vanilla Bean Paste and Coconut Extract Paste and mix until combined.
Step 3
Sift the flour, salt, baking soda and baking powder into the bowl and mix them in. Add oats and coconut, mix well to combine.
Step 4
Using a tablespoon of dough at a time, roll it into balls and place the tray then flatten each one slightly with fingers or a fork.
Step 5
Bake for 10-12 minutes or until golden brown. Remove from oven and transfer cookies to a wire rack to cool.
