Cream Cheese Mints

Ingredients
- 85g cream cheese, soft
- 450g icing sugar
- 1 1/2 teaspoons Taylor & Colledge Peppermint Extract Paste
Method
- Step 1
- Combine cream cheese, sugar and Peppermint Extract Paste until well blended. The dough should be kneadable (not too sticky). If this happens, add more sugar.
- Step 2
- Knead dough for 3 minutes. Roll sections into balls and flatten slightly, or shape into candy segments.
- Step 3
- Store on a cookie sheet lined with parchment paper until firm, then transfer to a sealed container. The mints will become harder the longer they sit.
- Step 4
- To make candy segments:

- Sprinkle parchment paper with confectioner's sugar and roll sections of the mint dough into a snake, about a 1/4-1/2 inch thick.
- Step 6
- Place in refrigerator for 10 minutes, remove and cut into small pieces.
