Cream Cheese Mints

Ingredients

  • 85g cream cheese, soft
  • 450g icing sugar
  • 1 1/2 teaspoons Taylor & Colledge Peppermint Extract Paste

Method

Step 1
Combine cream cheese, sugar and Peppermint Extract Paste until well blended. The dough should be kneadable (not too sticky). If this happens, add more sugar.
Step 2
Knead dough for 3 minutes. Roll sections into balls and flatten slightly, or shape into candy segments.
Step 3
Store on a cookie sheet lined with parchment paper until firm, then transfer to a sealed container. The mints will become harder the longer they sit.

To make candy segments:

Sprinkle parchment paper with confectioner's sugar and roll sections of the mint dough into a snake, about a 1/4-1/2 inch thick.

Place in refrigerator for 10 minutes, remove and cut into small pieces.
