Iced Vanilla Butter Cake

Ingredients
- BUTTER CAKE
- 125g butter, softened
- 2 tbs Taylor & Colledge Vanilla Bean Paste
- 1 + 1/4 cups caster sugar
- 3 large eggs
- 1 cup plain flour
- 1/2 cup self-raising flour
- 1/4 tsp bicarbonate of soda
- 1/2 cup milk
- VANILLA ICING
- 3/4 cup icing sugar mixture
- 2 tsps Taylor & Colledge Vanilla Bean Paste
- 1 tbsp milk
Method
- Step 1
- Preheat oven to 160C. Grease and line a deep 20cm round cake pan.
- Step 2
- Place all the ingredients for the cake into a large mixing bowl and mix using an electric mixer on low speed until just combined. Increase the speed to medium and beat until a thick, slightly paler batter forms.
- Step 3
- Pour mixture into the prepared pan and bake for 1 hour 15 minutes, or until dark golden brown, and a skewer comes out clean (test after one hour). Stand cake 5 minutes, then turn onto wire rack to cool completely.
- Step 4
- To prepare the icing, simply stir the ingredients together in a small bowl until smooth.
- Step 5
- Pour the icing over the cooled cake, allowing it to drip down the sides. Serve.
