Iced Vanilla Butter Cake

Ingredients

  • BUTTER CAKE
  • 125g butter, softened
  • 2 tbs Taylor & Colledge Vanilla Bean Paste
  • 1 + 1/4 cups caster sugar
  • 3 large eggs
  • 1 cup plain flour
  • 1/2 cup self-raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 cup milk
  • VANILLA ICING
  • 3/4 cup icing sugar mixture
  • 2 tsps Taylor & Colledge Vanilla Bean Paste
  • 1 tbsp milk

Method

Step 1
Preheat oven to 160C. Grease and line a deep 20cm round cake pan.
Step 2
Place all the ingredients for the cake into a large mixing bowl and mix using an electric mixer on low speed until just combined. Increase the speed to medium and beat until a thick, slightly paler batter forms.
Step 3
Pour mixture into the prepared pan and bake for 1 hour 15 minutes, or until dark golden brown, and a skewer comes out clean (test after one hour). Stand cake 5 minutes, then turn onto wire rack to cool completely.
Step 4
To prepare the icing, simply stir the ingredients together in a small bowl until smooth.
Step 5
Pour the icing over the cooled cake, allowing it to drip down the sides. Serve.
