Ingredients

  • CAKES
  • 250g butter, softened
  • 220g caster sugar
  • 300g self-raising flour
  • 4 eggs
  • 1 teaspoon Taylor & Colledge Vanilla Bean Paste
  • 1/2 teaspoon Taylor & Colledge Lavender Baking Paste
  • FROSTING
  • 200g cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 1/3 cup honey
  • 1/2 teaspoon Taylor & Colledge Lavender Baking Paste

Method

Step 1
Preheat oven to 180C. Place 24 baking cups in muffin pans.
Step 2
In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and pale, about 2-3 minutes.
Step 3
Distribute the batter evenly between the muffin cups and bake for 15-20 minutes or until cooked through.
Step 4
Cool the cupcakes in the tin for five minutes before removing to a rack to cool completely.
Step 5
To make the frosting, beat the cream cheese and powdered sugar in a large bowl with an electric mixer until light and creamy.
Step 6
Beat in honey and lavender baking paste.
Step 7
Spread the frosting onto the cooled cupcakes.
