Lavender Honey Cupcakes

- 250g butter, softened
- 220g caster sugar
- 300g self-raising flour
- 4 eggs
- 1 teaspoon Taylor & Colledge Vanilla Bean Paste
- 1/2 teaspoon Taylor & Colledge Lavender Baking Paste
- FROSTING
- 200g cream cheese, softened
- 2 cups powdered sugar, sifted
- 1/3 cup honey
- 1/2 teaspoon Taylor & Colledge Lavender Baking Paste
Method
- Step 1
- Preheat oven to 180C. Place 24 baking cups in muffin pans.
- Step 2
- In a large bowl combine all the cupcake ingredients and beat with an electric mixer until smooth and pale, about 2-3 minutes.
- Step 3
- Distribute the batter evenly between the muffin cups and bake for 15-20 minutes or until cooked through.
- Step 4
- Cool the cupcakes in the tin for five minutes before removing to a rack to cool completely.
- Step 5
- To make the frosting, beat the cream cheese and powdered sugar in a large bowl with an electric mixer until light and creamy.

- Beat in honey and lavender baking paste.

- Spread the frosting onto the cooled cupcakes.
