Oatmeal Lemon Cream Bars

  • 125g butter, softened
  • 1 cup packed dark brown sugar
  • 1 1/3 cups plain flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup rolled oats
  • 1 can sweetened condensed milk (375g)
  • 1 teaspoons Taylor & Colledge Lemon Extract Paste


Step 1
Preheat oven to 175 degrees C. Lightly grease a 20cm square baking pan.
Step 2
In a large mixing bowl, cream together the butter and brown sugar.
Step 3
In a separate smaller mixing bowl whisk together flour, salt, baking powder and oats.
Step 4
Add dry ingredients to the butter mixture and mix to combine.
Step 5
Press half of the oat mixture into the prepared pan.
Step 6
In a small bowl mix together sweetened condensed milk and lemon extract paste. Spread evenly on top of the oat mixture in the pan. Top with the remaining oat mixture.
Step 7
Bake for 20 to 25 minutes or until the top is golden brown. Let cool and refrigerate for 30 minutes or until set. Cut into bars and store in the refrigerator.
