Ingredients

  • BISCUITS
  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon Taylor & Colledge Peppermint Extract Paste
  • 1 1/4 cups all-purpose flour
  • 1/2 cup corn flour
  • FILLING
  • 40g butter, softened
  • 1-1/2 cups confectioners' sugar
  • 2 tablespoons milk
  • 1/2 teaspoon Taylor & Colledge Peppermint Extract Paste
  • 2 to 3 drops green food colour, optional

Method

Step 1
Preheat oven to 175C. Line two cookie trays with baking paper.
Step 2
In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in peppermint extract paste.
Step 3
Combine flour and corn flour, then gradually add to mixture and mix to form a soft dough.
Step 4
Shape into balls and place on prepared trays, flatten slightly with a floured fork or spoon.
Step 5
Bake for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool.
Step 6
To make the filling, beat butter until fluffy. Add the sugar, peppermint extract paste and a food colour if desired, beat until smooth. Add milk and mix on high until light and fluffy. Sandwich between cooled cookies. Store in an airtight container.
