Vanilla bean shortbread squares

  • 2 cups plain flour
  • 1/4 cup cornflour
  • A pinch of salt
  • 125g butter, softened
  • 1/2 cup icing sugar
  • 2 tbsp olive oil
  • 1 tsp Taylor & Colledge Vanilla Bean Paste
  • Taylor & Colledge Vanilla Bean Dusting Sugar, to serve


Step 1
Preheat the oven to 175C fan-forced and grease and line a 25x10cm baking tin with baking paper with 2cm overhang on each side.
Step 2
In a large bowl, whisk together the flour, cornflour and salt then set aside.
Step 3
In the bowl of an electric mixer, beat the butter until pale and fluffy. Add the oil and until smooth.
Step 4
Add the icing sugar and vanilla and beat until pale and light.
Step 5
Finally add the flour mixture and mix just until incorporated.
Step 6
Gently press the dough into the tin and even out the top.
Step 7
Bake for 20-25 minutes or until the edges turn golden.
Step 8
Use the baking paper to carefully remove the shortbread from the tin, and slice into squares. Place the squares onto a wire rack to cool.
Step 9
Sprinkle with vanilla bean dusting sugar to serve
