Ingredients

  • 260g flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons Taylor & Colledge Vanilla Bean Paste
  • 80g butter, melted
  • 175g caster sugar
  • 1 egg
  • 185mL milk
  • 125g melted butter, extra
  • 175g caster sugar, extra
  • 1 teaspoon ground cinnamon

Method

Step 1
Preheat oven to 190C. Grease two 24 cup mini muffin trays.
Step 2
In a large mixing bowl, sift together the flour, baking powder, salt, and cinnamon. In a separate bowl, mix together vanilla, butter, sugar, egg and milk. Add to the dry ingredients, and mix until just combined.
Step 3
Divide the batter evenly between the muffin tins, and bake for 10-12 minutes or until cooked through.
Step 4
Combine the extra sugar and cinnamon in a cup or bowl. While muffins are still warm, brush tops with melted butter, and dust with the cinnamon mixture.
