Ingredients
- 260g flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 teaspoons Taylor & Colledge Vanilla Bean Paste
- 80g butter, melted
- 175g caster sugar
- 1 egg
- 185mL milk
- 125g melted butter, extra
- 175g caster sugar, extra
- 1 teaspoon ground cinnamon
Method
- Step 1
- Preheat oven to 190C. Grease two 24 cup mini muffin trays.
- Step 2
- In a large mixing bowl, sift together the flour, baking powder, salt, and cinnamon. In a separate bowl, mix together vanilla, butter, sugar, egg and milk. Add to the dry ingredients, and mix until just combined.
- Step 3
- Divide the batter evenly between the muffin tins, and bake for 10-12 minutes or until cooked through.
- Step 4
- Combine the extra sugar and cinnamon in a cup or bowl. While muffins are still warm, brush tops with melted butter, and dust with the cinnamon mixture.
