Ingredients

  • 1kg potatoes
  • 1 cup fresh lemon juice
  • 1/2 cup olive oil
  • 3 teaspoons chopped parsley
  • 1/4 teaspoon Taylor & Colledge Peppermint Extract Paste
  • 3-4 red shallots, sliced finely
  • Salt and pepper to taste

Method

Step 1
Boil the potatoes, peel and cube them.
Step 2
Combine olive oil, lemon juice, parsley, peppermint extract paste and shallots in a small bowl.
Step 3
Pour over potatoes while they are still warm, season with salt and pepper to taste and mix gently till dressing is evenly distributed.
