Warm Potato Salad

Ingredients
- 1kg potatoes
- 1 cup fresh lemon juice
- 1/2 cup olive oil
- 3 teaspoons chopped parsley
- 1/4 teaspoon Taylor & Colledge Peppermint Extract Paste
- 3-4 red shallots, sliced finely
- Salt and pepper to taste
Method
- Step 1
- Boil the potatoes, peel and cube them.
- Step 2
- Combine olive oil, lemon juice, parsley, peppermint extract paste and shallots in a small bowl.
- Step 3
- Pour over potatoes while they are still warm, season with salt and pepper to taste and mix gently till dressing is evenly distributed.
