No Bake Lemon & Coconut Slice

  • 125g butter
  • 1 cup dessicated coconut
  • 250g milk arrowroot biscuits, finely crushed
  • 1 teaspoon Taylor & Colledge Lemon Extract Paste
  • 1/2 cup sweetened condensed milk
  • 1 1/2 cups icing sugar
  • 20g butter, melted
  • 1 teaspoon Taylor & Colledge Lemon Extract Paste (adjust to your taste)
  • 2 tablespoon dessicated coconut


Step 1
In a small saucepan heat butter and sweetened condensed milk on a gentle heat until butter is melted and mixture is combined.
Step 2
Combine coconut and biscuits, mix well. Add condensed milk mixture, Lemon Extract Paste and mix well until well combined.
Step 3
Hand press firmly into a greased 18cm x 28cm slice tin. Allow to set in fridge for an hour.
Step 4
To prepare icing, stir together the sifted icing sugar, melted butter and Lemon Extract Paste. Add a little warm water to achieve a thick, smooth paste.
Step 5
Remove set slice from fridge, ice with lemon icing and sprinkle with coconut. Allow to set for a couple of hours, slice into pieces to serve.
